Hokkaido pumpkin soup


Keep warm during the winter with this lovely pumpkin soup. It servers 4 people.

You will need:

  • 1 Hokkaido pumpkin
  • 1 onion
  • 8 potatoes
  • Vegetable stock
  • Cayenne pepper
  • Salt
  • Pepper
  • A bit of butter for frying
  • 500 ml of water
  • Cream with 18% fat


  • Peel potatoes and onion, and wash the pumpkin
  • Cut up the onion, potatoes, and the pumpkin and fry them shortly in a saucepan
  • Add the water and the vegetable stock. The vegetables so not need to be covered completely
  • Boil the vegetables for 20 minutes before taking it off the heat
  • Remove most of the water (save it for later) and blend the vegetables. Add the stock water if you want a thinner soup
  • Return the soup to the heat and season with salt, pepper, cayenne pepper and cream

Tip: Enjoy the soup with some fried bacon and/or bread.
