Kiwi salad


This portion fits two people, but can easily be up scaled! The salad contain both sweet, crunch, umami, and lively color which makes it perfect for every occasion.

You will need:

  • 3 carrots
  • Pointed cabbage (or any other type of lettuce/cabbage you like)
  • 2 kiwi
  • Pine nuts
  • Parmesan
  • Apple vinegar
  • Honey
  • Olive oil



  1. Peal the carrots and slice them to the size you want (bit size is best)
  2. Cut thin slices of the cabbage and cut the slices into smaller pieces
  3. Peal the kiwi, cut it in half and cut the fruit into small pieces
  4. Add the carrots, cabbage, and kiwi into a bowl
  5. Gently fry the pine nuts on a dry pan – keep an eye on them as they burn easily
  6. Combine apple vinegar, honey, and olive oil to taste, and add it to the bowl with the salad
  7. Grate the parmesan and add it to the bowl – mix well
  8. Add the pine nuts on top of the salad
  9. Enjoy!
