Marzipan and pistachio muffins

These muffins have an outer shell of marzipan batter, center of pistachio, and a dusting of cinnamon sugar on the top. The recipe will make 24 muffins.

Marzipan batter:

  • 140 grams of butter
  • 250 grams of sugar
  • 2 eggs
  • 1 teaspoon of vanilla sugar or 3 teaspoons of vanilla essence
  • 300 ml of milk
  • 280 grams of flour
  • 140 grams of rye flour
  • 3 teaspoons of baking power
  • 1 teaspoon of cinnamon
  • 200 grams of marzipan

Filling:

  • 200 grams of pistachio filling (I bought this ready made)

The filling can be substituted with nougat or more marzipan.

Topping:

  • 30 grams of butter
  • 200 grams of sugar
  • 4 teaspoons of cinnamon

Walk-through

  1. Preheat the oven to 200 C
  2. Stir sugar and butter together. When it is combined add egg, milk, and vanilla
  3. Combine cinnamon, flour, and baking power. Pour the flour mixture into a strainer and sieve it into the egg mixture
  4. Grate the marzipan and add it into the cake batter
  5. Add 1½ teaspoon of batter to the bottom of the cupcake cases and add some of the filling on top
  6. Spread the rest of the cake batter on the muffins
  7. Bake the muffins in the oven. It will take around 20-25 minutes – poke the cake with a skewer, if it comes out clean the muffins are done
  8. Melt the butter and combine sugar and cinnamon
  9. Brush the muffins with butter and immediately roll them in the cinnamon sugar
